Ingredients

Fruit Filling

Crust & Crumble

  • 1 1/2 cups oats
  • 1 1/2 cups almond flour
  • 1 scoop Vanilla Premier Protein Powder
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup coconut oil (melted)
  • 1/4 cup maple syrup + 2 tbsp
  • 1 tsp vanilla extract

Directions

For the Fruit Filling:
  1. Combine the frozen fruit and lemon juice in a saucepan over medium heat. Heat on MED-HIGH until the mixture comes to a boil. Reduce heat to MED-LOW and simmer, stirring occasionally and mashing the larger berries in the process, until the mixture thickens slightly. Remove from heat, and stir in the vanilla protein powder and cornstarch. Set aside to cool.
For the Crust & Crumble:
  1. Preheat your oven to 350°F and line an 8×8 pan with parchment paper.
  2. In a bowl, mix the oats, almond flour, protein powder, baking powder, and salt. Set aside.
  3. In a small bowl, whisk the melted coconut oil, 1/4 cup maple syrup, and vanilla extract. Pour the mixture into the dry ingredients and mix until fully combined.
  4. Set aside about ⅓ of the oat mixture. Press the remaining 2/3 of the oat mixture in the prepared pan. Use your hands or a spatula to smooth (spread it and make it flat with the help of your spatula) and bake for 10 minutes.
  5. Spread the prepared fruit mixture over the baked crust. Sprinkle the remaining oat mixture on top of the fruit layer.
  6. Bake for another 25-30 minutes.
  7. Let the bars cool completely before cutting.
