Ingredients

  • 2 cups blanched almond flour
  • ½ cup Premier Vanilla Protein Powder
  • 1 tbsp pumpkin pie spice
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 1 cup unsalted butter
  • 1 ¾ cups coconut sugar
  • 1 large egg
  • 1 ½ cups pumpkin puree
  • 2 tbsp vanilla extract
  • 1 to 1 ½ cups chocolate chips or chopped walnuts

Directions

  1. Preheat the oven to 350°F. Butter or spray a piece of parchment paper with nonstick cooking spray and place in a baking dish.
  2. Whisk together the almond flour, Vanilla Premier Protein powder, pumpkin pie spice, baking soda, and salt in a large bowl.
  3. Using an electric mixer, beat the butter until pale and creamy. Add the coconut sugar and beat until fluffy. Mix in the egg, pumpkin puree, and vanilla.
  4. Slowly add the dry flour mixture to the wet ingredients, and mix until combined.
  5. Fold in the chocolate chips or walnuts with a rubber spatula.
  6. Spread the batter evenly into a 9 x 13 baking dish.
  7. Bake for 35 to 45 minutes until a toothpick inserted in the center comes out clean. Cover with foil if browning too fast before the center is done.
  8. Let cool for 20 minutes in the dish before transferring to a wire rack to cool completely. Cut into bars and enjoy!
